Ingredients

  • 2 tbsp Pistachios Without shell
  • 2.5 tbsp Almonds Not soaked
  • 1 tbsp Cashew nuts Unsalted
  • 0.5 tsp Cardamom seeds If you don't have cardamom pods but Cardamom powder, you may add the powder directly to the final resultant powder.
  • 0.5 tbsp Ground nuts Optional

Instructions

  1. Keep all the ingredients ready.

  2. In a pan over medium flame, dry roast all the ingredients for about 3-4 minutes; until they start changing color & emanate a fragrant dry fruits' aroma. However, if you're adding groundnuts too (which I mentioned as 'optional'), PLEASE dry roast groundnuts separately on the pan & when cooled, rub them between your palms to get the skin off. You'd need groundnuts without the cover to go into this Masala Milk Powder for the best taste. :-)

  3. Wait till it cools or you could place them under a fan to make it fast.

  4. Add the roasted mixture of dry fruits to a dry mixer & grind for less than a minute.

  5. If you prefer the crunchy presence of the milk powder in your milk, you may only keep pulsing your mixer while checking if the powder has been ground the way you wanted it to be.

  6. You Masala Milk Powder is ready.

  7. Remember that after removing the mixer lid, you need to let the ground powder rest for a while before transferring it into an air tight container.

Recipe Notes

  1. You may avoid adding cardamom powder/seeds if you or your kid do not like its flavor.
  2. This milk powder does NOT include sugar. However, it's naturally moderately sweet which renders milk a sweet taste upon mixing. But, if you wish to add sugar to your milk, please add separately while mixing in the milk. Adding sugar as an ingredient to make this masala doodh powder may tamper with the chemistry of the powder & may lead to moisture creeping in & spoiling it for use.
