I remember my first tryst with mayonnaise, that was when it smothered the first ever Shawarma I had in my life. š And I wondered how a sauce could taste so heavenly & so hopelessly addictive. I was just 8 then and I had no idea neither the interest to know what a certain sauce or condiment would be made up of. Growing up, I found that it was not as easy to procure the exact kind of taste of the mayonnaise that’s used in the authentic Shawarmas of the Gulf. If you’ve followed my blog since quite some time, you know that I have quit a lot of processed foods to replace them with healthier alternatives/versions. This DAIRY-FREE & OIL-FREE EGGLESS MAYONNAISE RECIPE is the result of that very quest.

Most of the mayos do not taste really impressive when you buy them from the supermarkets. No matter which brand or flavor you pick! Ask me, because I’ve tried almost all the ‘leading’ brands with all their classic & flavored versions. While some of them were okay-ish, all of them caused me to bloat whenever I had them smeared on my food or had as a dip.
Nonetheless, store-bought mayonnaise always has copious amounts of hydrogenated oil, acidity regulators and preservatives added to it in order to improve all of these:
- Creamy & glossy texture
- Flavor
- Shelf life
Years ago, I used to ask my friends about how I could make my own Mayo at home. It was then that it struck me the way generous quantities of oil & eggs were instrumental in rendering the characteristic taste of mayonnaise. Never forget the sugar that goes into the seductive sauce!
While I had given up on buying readymade mayonnaise long back, by replacing it with mustard sauce, this recipe was, actully, a serendipity. I once craved sandwich really very bad & I just thought of putting these ingredients together to recreate mayonnaise my own way.

What’s HEALTHY about this version of oil-free EGGLESS MAYONNAISE recipe?
This Mayo recipe does not make use of milk or any dairy element. So, if you’re allergic to dairy products or are lactose-intolerant, this is a go-to version for you.
I have not used oil in any form and the final gloss is all due to the cashewnuts being used.
I have’t used additional sugar to sweeten the mayonnaise, but have added just 2 dates; that you can totally skip, if you please. Because, the presence of cashewnuts makes it naturally sweet anyways.
No Eggs, No Milk, No Sugar this is a 100% vegan condiment.
Instant Vegan, Eggless Mayonnaise recipe without oil & sugar
Here's how to make oil-free, eggless mayonnaise in less than 10 minutes without using oil or sugar.
Ingredients
- 150 gm Cashewnutes soaked for 5 minutes
- Ā½ Lemon for lemon juice
- 6 Garlic cloves small
- Ā½ tsp Chat masala
- 2 Dates de-seeded
- Salt to taste
- 1 tbsp Water
Instructions

Soak the cashewnuts for 5 minutes.

In a blender/mixer, add all the above ingredients & blitz.

Check for the consistency & grind again. If needed, add water. Grind until the paste is super smooth.

Your oil-free eggless mayonnaise is ready to use and stored.
Recipe Notes
- You may skip the Chat masala completely, or replace it with seasonings of your choice. It could be mustard powder, oregano, chilli flakes or paprika.
- Instead of the lemon juice, you may use vinegar or ACV. I prefer the lemon though.
- Adding water while blending be done with caution & according to the consistency you desire.
- While storing, please store it in an air-tight glass container. Keep refrigerated. One batch stays fresh for upto 14 days.
Isn’t this way to easy to make?
However, remember to have this in moderation. Let me always tell you from experience that regardless of how healthy a snack or dessert is, over-eating the food should not be entertained neither justified. Because, if you do that, undoing the damage of overeating can take significant time.

Oh this sounds really good. Can I substitute the cashews for almonds? But then Iām guessing the cashews would have more natural oils.
Yes. You’d have to soak the almonds for a bit longer & peel them. Their natural sweetness would be a bit lower, so I guess, you may want to use an extra date. About the oil aspect, yes cashews will easily blend into a more smooth & glossy mass. You’d probably need about 20-30g more or almonds to get the same yield. Barring that, most of it remains the same. Works equally good if you have almond milk already at home.
